Easy Tortilla “Quiche”

IIf you want to start your day with a delicious breakfast that’s both easy to make and packed with nutrition, this Tortilla “Quiche” is the perfect choice. It’s creamy, savory, and made with eggs, cottage cheese, parmesan, ham, peppers, and green onions. And the crust? Just a tortilla—thin, golden brown, and crispy. With a breakfast like this, the day is already looking great.

I knew this “quiche” would be tasty in the morning, so I was a little surprised (and a little proud) when I found my 13-year-old daughter eating it straight from the fridge as an after school snack. Needless to say, I’ll be making it often—and I can’t wait to come up with more flavor combinations to see which one becomes her favorite.

What you need to make “Tortilla Quiche”

Tortilla – Use a large burrito-size tortilla (about 10 inches).

Eggs – The base of the quiche.

Cottage Cheese – Makes the eggs creamier and adds extra protein.

Ham – You can also use other cooked meats like breakfast sausage, bacon, or chorizo. (Make sure they’re fully cooked before mixing with the eggs.)

Red Bell Peppers and Scallions – These add color and flavor, but feel free to use whatever vegetables you like or have on hand—spinach, mushrooms, broccoli, etc.

Parmesan Cheese – Or substitute with any good melting cheese.

Tips and Tricks

This is a great recipe for meal prepping—you can store it in the fridge for up to 4 days. There are no limits to the ingredients you can use, so be creative and enjoy all the delicious possibilities!

If you notice the tortilla browning too quickly while the eggs are still a bit wiggly, lightly cover the quiche with aluminum foil to prevent it from burning.
