Chocolate chip cookie is my favorite cookie. And my 7 year old favorite cookie. In fact, she wont eat any other cookie or any other chocolate chip cookie except mine. There’s nothing fancy about this recipe, it is simple, easy, so forgiving but also perfectly delicious. This recipe makes between 15-17 cookies, it is a small batch but you can always double the quantities, I’ve done it many times when I bake them for parties or just to stock up my fridge and they come out great. They are also great from the freezer! scoop you cookie dough onto a cookie sheet align with parchment paper, just as if you were to bake them but they don’t have to be evenly spaced,  flash freeze them (about 10 min in your freezer) take them out, put all the little cookie balls in a zip lock freezer bag and bake them as you need. No need to thaw. This is how I make them. 

Cream the butter and sugars. Can you see how well love my paddle attachment is? I won’t confirm nor deny that I use it too much. 

Add the egg, vanilla, flour,  baking soda, salt, cinnamon and mix again just until everything is combined. No need to sift flour, no need to whisk the egg, no need to mix after each ingredient. See? I told you it was easy. Add the chocolate chip and mix again until they are all mixed into the dough. 

placed the cookies on a cookie sheet lined with parchment paper and bake 10 minutes @ 375. Now, my oven is tricky. I always move the rack to the very top and bake my cookies there. If I do it in the middle, my cookies brown to much on the botton and come out crunchy. I don’t like crunchy cookies, I want them soft. So, if you trust your oven, bake them in the middle rack. I won’t judge you.

Let them cool. I know it is hard but that’s what normal people do. Isn’t it? I couldn’t tell you.

Get you a glass of milk and enjoy! This cookies are crispy on the outside and chewy in the inside. The cinnamon gives them just a perfect touch of warmness.
