For this recipe I used Open Prairie®Natural*Pork loin, which I cut into pork chops. I love using a cut of meat that it is easy to work with and also a quality cut like this beautiful pork loin.
What you need to make Pork Chop Sheet Pan Dinner
Equipment.
Large sheet pan or large baking dish
Aluminum foil.
Ingredients
Pork Loin. Cut into pork chops about 6 oz each
Baby gold potatoes
Fresh green beans
Barbecue sauce
Salt and pepper
Helpful tips
I like to make a quick brine for the pork chops. It is not a must, these pork chops are so good as they are and always turn out great, but if you have time to give them a special treatment, why not? The ingredients are directions for the brine are included on the recipe.
Pork Chop Sheet Pan Dinner
Ingredients
- For the brine (optional):
- 4 cups water
- ¼ cup salt
- 2 tbsp brown sugar
- 1 bay leaf
- For the Pork Chops:
- Olive oil
- 4 6oz Open Prairie® Natural* pork chops (about ¾ to 1” thick)
- 1 lb baby gold potatoes
- 6-8 oz fresh green beans
- 1/3 cup barbecue sauce
- Salt and pepper to taste
Instructions
- In a medium saucepan add four cups of water and warm the water on medium heat. You don’t want the water to boil, just get it warm enough to dissolve the sugar and salt.
- Add the sugar and salt and stir until dissolved. Add the bay leaf and let the brine come to room temperature.
- Transfer the pork chops to a gallon zip top bag and pour in the brine. Place in the refrigerator for 30 minutes to marinate.
- Preheat oven to 425 degrees Fahrenheit.
- Lightly oil a large sheet pan with olive oil and place the potatoes on one third of sheet pan. (If some potatoes are too big, cut them in half so that everything is roughly the same size)
- Drizzle the potatoes with olive oil and season with salt and pepper. Bake for 10 minutes.
- Remove the pork chops from the brine and dry them with paper towels.
- Season the pork chops with salt and pepper and add them to the baking sheet, next to the potatoes. Bake for 10 min. (if you like tender green beans, you can add them now. Season them with salt and pepper)
- After 10 minutes remove the sheet pan from the oven and generously brush both sides of the pork chops with barbecue sauce. Add the green beans next to the pork chops and season with salt and pepper.
- Return the sheet pan to the oven and bake for 8-10 minutes or until the internal temperature of the pork chops has reached 145 degrees Fahrenheit.
- Let the pork chops rest for 5 minutes and serve.
